PARSI MAWA CAKE

INGREDIENTS 

  • 1 1/4 cup all purpose flour ( maida)

  • 2eggs , room temp 

  • 100 gms khoya or mawa

  • 6 tbsp butter , unsalted , room temp 85gms

  • 1cup sugar 

  • 6 tbsp milk 

  • Handful of almonds and pistachios 

  • ½ tsp green cardamom powder 

  • ½ tsp baking powder 

  • Pinch of salt 

INSTRUCTIONS 

  • cream the butter and sugar until light and fluffy. Use hand electric mixer 

  • Add khoya

Whisk for 2 mins 

  • Add eggs one at a time and whisk the mix for 1min

Add baking powder and pinch of salt 

  • Now add flour 

  • Mix everything with a spatula first and then use the hand mixer 

  • Add milk and whisk until everything combines 

  • Add cardamom powder and a few chopped nuts and mix 

  • Transfer to a cake pan

  • Top off with almond and pistachios 

  • Bake at 180 c 

  • Enjoy
