DRY GARLIC AND PEANUT CHUTNEY
(Vada pav chutney)
INGREDIENTS
10-12 dry red chillies( I’ve mixed Kashmiri and byadgi chillies)
12-15 pods of garlic ( unpeeled)
Pinch of hing
2-3 tbsp Sev or chivda or boondi
2tbsp Roasted Peanuts
¼ cup Dry coconut
Red chilli powder
Salt to taste
Pinch of chaat masala ( if using chivda no need to add this )
(Red Chilli: garlic is 1:2 ratio)
INSTRUCTIONS
DRY roast the red chillies( no oil )
Roast for only a min
Dry roast coconut, peanuts and garlic for 2-3 mins
Cool all ingredients
Dry grind all the ingredients
Lastly add hing, red chilli powder and sev or chivda
And grind again for less than a min
That’s it, your tasty and spicy Dry garlic chutney is ready
Enjoy with Bhajiyas, vadas, parathas ( endless options… I eat it with bhakris too
I’ve served it today with cabbage pakoras and Paan chai
