CHOCOLATE MOCHI COOKIES

INGREDIENTS FOR MOCHI 

  • 70 gms glutinous rice flour 

  • 20 g cornstarch 

  • 15 g sugar 

  • 140 g milk 

  • 15 g unsalted butter

INSTRUCTIONS 

  • mix everything (except butter)  well in a glass bowl 

  • Wrap with cling wrap and steam for 30 mins(prick few holes to help release the steam)

Remove and add butter while Mochi is still hot

Mix well 

  • Wrap with cling wrap again and leave it aside to use later

    INGREDIENTS FOR COOKIES

  • 100g unsalted butter

  • 100 gms brown sugar

  • 1egg

  • 180 gms all-purpose flour

  • 20 g cocoa powder

  • 2gms baking powder

  • 50 gms chocolate chips 

  • Pinch of salt 

INSTRUCTIONS 

  • whisk together  the butter and brown sugar well until well combined

  • Add the egg and mix well 

  • Add flour, baking powder, salt  and Cocoa powder

mix well

  • Refrigerate for 30 mins 

LET’S MAKE COOKIES

  • Preheat oven at 190 c

  • take 10 gms of Mochi and roll into a ball 

  • Make around 20 balls 

  • Now take cookie dough 

  • Fill Mochi inside and shape it into a ball

Flatten slightly  to make cookie shape

  • Add chocolate chips on surface of the cookie

Bake at 190 for 12 mins 

  • Remove , cool and enjoy
