CHOCOLATE CHIP MUFFINS

INGREDIENTS for Dry-mix 

  • 2 ½ cups of flour

  • 1tbsp baking powder 

  • 1tsp baking soda

  • ½ tsp salt 

  • 1cup of mini Chocolate chips 

INSTRUCTION

MIX everything until well combined

INGREDIENTS FOR WET MIX

  • ¾ -1 cup granulated sugar 

  • 2 large eggs ( room temp) 

  • 1cup Buttermilk ( room temp) (1cupmilk+1-2tbsp lemon juice)

½ cup Butter( soft) 

  • 1tbsp vanilla 

INSTRUCTIONS 

  • USE HAND MIXER  TO MIX ALL WET INGREDIENTS IN A LARGE BOWL

LETS PUT IT TOGETHER 

  • Preheat oven to 425f or 218c 

  • mix the dry mix with the wet mix and gently fold in until just combined 

  • Do not overmix

  • Add batter into a greased  muffin tray ( fill upto the brim)

You can fill mix in alternate muffin slots 

  • Sprinkle tops with more chocolate chips 

  • You can sprinkle some coarse sugar if desired 

  • Bake at 425 F for 5 mins only 

  • Reset oven to 375 F or 190 c  for 12 -13 mins ( 12 mins was perfect for my oven ) 

  • Check done by inserting the toothpick method. (Be careful if you insert into a chocolate chip the tooth pick will come out wet )

  • Don’t overbake as muffins will turn out dry

That’s it , your perfect dome Chocolate Chip Muffins are ready
