CHETTINAD’S KAARA CHUTNEY

INGREDIENTS

2onions , sliced

  • 10 dry chillies

  • 2-3 Tomatoes 

  • Small piece ginger

  • 15 cloves of garlic 

  • Curry leaves

  • Coriander leaves

  • Pinch of turmeric

  • ½ tsp chilli powder 

  • ¼ tsp Mustard seeds 

  • ¼ tsp urad dal 

  • Salt to taste 

  • Gingelly Oil 

INSTRUCTIONS 

  • Heat oil in pan 

  • Add chillies, ginger. Garlic, curry leaves 

  • Add onions and cook until 40% done

Add tomatoes and sauté

Add turmeric powder, salt 

  • Add coriander leaves and mint leaves( optional) 

  • Add chilli powder and sauté for a minute 

  • Cool the mix and grind it to fine paste

Add water if required

  • Heat oil in tadka pan and add urad dal, red fry chillies, curry leaves and mustard seeds 

  • Once they splutter add the chutney to it and sauté for a minute until everything combines

That’s it , your authentic Kaara chutney is ready
