KERALA STYLE BEANS MEZHUKKUPURATTI

Beans Mezhukkupuratti
Delicious Stir Fried French Beans with coconut chips and curry leaves.

INGREDIENTS

  • 200 -250 gms long beans or french  beans

  • 1 medium onion, chopped

  • 4-5 green chilies

  • 1tsp mustard seeds

  • ¼ tsp turmeric powder

  • ½ tsp chili powder

  • Salt to taste

  • pinch of Hing ( asafoetida)

  • 1-2 tbsp Fresh coconut bite-sized pieces 

  • Few curry leaves

  • 1-2 tbsp coconut oil

INSTRUCTIONS

  • Split the beans lengthwise with a knife

  • Cut into 1inch pieces ( discard the ends of the beans)

  • Heat oil in a pan

  • Add mustard seeds 

  • Add Hing, coconut slices and curry leaves

  • Keep stirring and fry until coconut slices turn slightly light  brown in color 

  • Add chopped onion. Sauté for 3-4 mins

  • Add green chilies and salt 

  • Fry until everything in pan turns brownish in color 

  • Now add chili powder, turmeric and sauté for 1-2 mins 

  • Add beans and continue to sauté for 3-4 mins

  • Now cover and cook for 8-10 mins. Do not add any water on med-low

  • Stir occasionally

  • Now open the lid and fry vegetable until it dries up completely( 3-4 mins)

  • Check the seasoning and garnish with few curry leaves 

  • Mix and it’s ready 

  • Your delicious healthy beans stir fry is ready

  • Enjoy with Kerala rice or chapatis
