BENGALURU SPECIAL DONNE BIRYANI (chicken biryani ) December 28, 2021 Shilpa Anand INGREDIENTS for marinade1.5 kg chicken, washed, cleaned and cut 1tbsp of red chilli powder Pinch of turmeric2 tbsp ginger garlic paste 1 cup curd Salt to taste INGREDIENTS FOR THE SPICE PASTE 2-3 onions, sliced3-4 inch cinnamon8-10 cloves4-5 cardamon pods1tbsp peppercorn8-10 green chillies2 tbsp oilINGREDIENTS FOR GREEN PASTE 1 small bowl of mint leaves1 med bowl fenugreek leaves 1 large bowl coriander leaves1 tbsp oil INGREDIENTS FOR RICE 1 kg basmati rice ( original recipe needs jeera samba rice)1-inch cinnamon2-3 cloves6-7 cardamon1 mace 1-star anise½ tsp stone flower 1 tsp shahi jeera 1 bay leaf 2 tbsp Kasuri methi 1 small onion, sliced 5 tbsp ginger garlic paste Pinch of turmericSalt to taste Ghee 1 cup oil INSTRUCTIONSmarinate chicken with marinade and keep aside for 1-2 hrs( at least for 30 mins) Heat oil in a pan Add ingredients for spice paste and fry for a few mins Cool and grind to a paste with little water if required Now add oil to the pan Add green paste ingredients and fry for 2-3 minutes Cool and grind to a fine paste Now take a deep kadhai or vessel Heat up oil Add all the whole spices and fry for a min Add onions and fry Add ginger-garlic paste and turmeric and fry Add the marinated chicken Add spice paste and salt Cover and cook for 10-12 mins Add green paste and cover and cook until chicken is 70% cooked Add rice and enough water Bring to a boil Add lemon juice Cover and cook on high for 5 mins and then switch to med-low heat for 20-25 mins or until rice and chicken are done Add 2-3 tbsp of ghee That’s it, your Bengaluru SPL Donne Biryani is ready Serve hot with a boiled egg in a Donne bowl for an original experience Sides of Onions/lemon wedge and onion Raita SPICE LEVEL:🌶🌶
