ANDA METHI MALAI MASALA

INGREDIENTS

1 bunch methi, washed and cut 

  • 1-2 onions, chopped 

  • 1-2 tomatoes chopped 

  • 8-9  eggs,boiled  

  • 2 tbsp dahi 

  • Milk 

  • Cream 

  • 1 whole bulb of garlic 

  • 1-inch ginger 

  • 6-7 green chillies 

  • 1 tbsp char magaz

  • 1 tbsp almonds

  • 1 tbsp cashews

  • 1-2 Cinnamon sticks

  • ¼ tsp Black pepper 

  • 3-4 Green Cardamon  

  • 1 tbsp Coriander seeds 

  • 1 tsp Cumin seeds 

  • 4-5 cloves 

  • Salt to taste 

  • Oil 

INSTRUCTIONS

  • heat oil in a kadhai 

  • add nuts, whole spices, ginger, garlic and fry for 1-2 minutes 

  • Add onions and fry for 7-8 minutes

Now add tomatoes and continue to fry for 4-5 minutes

  • Cool and grind to a fine paste 

  • Heat 3-4 tbsp oil in a kadhai 

  • Add the ground paste and fry 

  • Add salt 

  • Continue to bhunao the masala on a higher flame for 4-5 minutes

  • Add dahi and cream 

  • Bhunao the masala well 

  • Cover and cook the masala for a few minutes 

  • Add milk and simmer for 2-3 minutes

  • Add the methi leaves and mix well

  • Add boiled eggs and simmer for 3-4 minutes 

  • And that’s it, your easy and delicious Anda Methi Malai is ready 

  • Serve hot with rotis,rice, jeera rice
