NGREDIENTS FOR ACHARI MASALA 

  • 1tsp nigella seeds ( kalonji) 

  • 1tsp fennel seeds 

  • 1 tsp mustard seeds

  • 1tbsp coriander seeds

  • 1tsp  cumin seeds

  • ¼ tsp methi seeds 

  • ½ tsp pepper 

OTHERS 

  • 500 gms eggplant, cut 

  • Salt to taste 

  • 1tsp red chilli powder

  • 1 tsp Shilpas Masala Mill Kashmiri chilli powder 

  • ¼ tsp turmeric powder

  • 1cup tomatoes, chopped 

  • 1cup onions, chopped

  • ½ cup mustard oil 

  • 1tbsp ginger garlic paste 

  • 1tsp chaat masala 

  • Potatoes( optional) cut 

INSTRUCTIONS 

  • dry roast achari masala ingredients

Coarse grind the spices and keep aside for use later

Soak the cut eggplants in water mixed with vinegar for 10-15 mins 

  • Remove and pat dry

  • Now sprinkle 1 tbsp achari masala on it 

  • Shallow fry the eggplants and keep aside

Heat oil and fry onions 

  • Add ginger-garlic paste and fry 

  • Add tomatoes and continue to fry the masala 

  • Add dry spice powders and 1 tbsp achari masala. Fry the mix for 2-3 mins

Add the potatoes, eggplants and cover and cook for 10-15 mins or until tender

Add water if needed 

  • That’s it , your Achari Baingan is ready

Serve hot with parathas, Phulkas
