UBE HALAYA

Ube halaya is a type of Filipino jam made from boiled purple yam.

It is also the main base in Ube flavoured pastries, ice creams and other desserts like halo halo. It’s creamy, sweet and delicious, and it’s not hard to see why it’s so popular. ( I enjoyed it on toast with my tea.. lol) 

INGREDIENTS

  • 500 gms ube, boiled and grated

1can condensed milk

  • 1can evaporated milk

  • ½ -1cup sugar 

  • 1tsp  vanilla extract 

  • 1tsp ube food colouring (optional)

  • 2tbsp butter 

INSTRUCTIONS

  • Mix the ube with evaporated milk, condensed milk, sugar

Purée or grind it to make a smooth paste

Add extract and food colouring

Heat butter in a pan and add the mixture

  • Cook on low flame for 25-30 mins 

  • Keep stirring continuously 

  • It should thicken and leave sides of the pan

That’s it, remove, cool and enjoy
