CARIBBEAN CASSAVA PONE

Cassava pone is a Decadent African pudding-like dessert made with root vegetables,  cassava and coconut. This dessert is cherished in most Caribbean countries( Guyana, Barbados, Belize, Trinidad and Jamaica)

THIS IS A VEGETARIAN, Flourless dessert which has vegan options too 

I’ve made These Bajan Treat Pones with pumpkin but sweet potatoes or  carrots may be substituted too

INGREDIENTS

  • 2cups grated cassava

  • ½ cup coconut, grated

  • ½ cup pumpkin, grated

  • 1tbsp raisins( or more) 

  • ½ -¾ cup brown sugar 

  • ½ tsp baking powder

  • ½ tsp cinnamon powder

  • ½ tsp nutmeg

  • ½ tsp salt

  • ½ -¾ tsp fresh ginger, grated

  • ¾ cup evaporated milk

  • ½ tsp black pepper( optional)

  • ¼ cup Coconut milk

  • 2tbsp butter, melted

  • Vanilla essence 

INSTRUCTIONS

  • Preheat oven to 350

  • Grease a baking dish

Take a large bowl and mix all ingredients in it

Pour into greased dish 

  • Bake for 60 -75 mins or  until centre is firm

  • If it’s still wobbly add few more mins

  • Remove and cool

And that’s it, Decadent Cassava Pone is ready

Cut into the desired shape and top with cream, ice cream or toasted coconut
