KOLHAPURI AKKHA MASOOR July 30, 2020 Shilpa Anand Kolhapuri Akha MasoorMaharashtrian Sabut ( whole) MasoorEnjoyed with naans and riceINGREDIENTS: 1cup Sabut Masoor ( soaked)2 tsp fresh grated coconut1-2 green chilies1-2 large garlic cloves1inch ginger fresh coriander 1medium onion, grated1medium tomato, grated 2 bay leaves1tsp Kanda lasun masala( or garam masala)1tsp red chili powder½ tsp turmeric powder 2-3 tbsp oil Salt to tasteINSTRUCTIONSPressure cook the soaked Akkha Masoor with little chopped onion, a pinch of turmeric and salt for one or two whistles only coarsely grind green chili, coriander, garlic, ginger, and coconut Keep asideHeat oil in a panAdd bay leavesAdd grated onion Fry for few mins until onion turns golden brownAdd the coarsely ground coconut pasteFry for 1 minAdd turmeric, chili powder, Kanda lasun masala, and saltFry for 1-2 minsAdd tomato Fry until oil separates from sides of the pan Add the cooked Masoor Sauté for 1-2 minsAdd hot water to desired consistency Adjust seasoning Cook for few more minutes That’s it, your easy and delicious Kolhapuri Akha Masoor is ready Traditionally served and enjoyed with Naan, it’s delicious with steamed rice too SPICE LEVEL: 🌶🌶🌶
