MAHARASHTRIAN MASALE BHAT

Maharashtrian Masale Bhat
Masale Bhat is a traditional one pot spicy rice made by using fresh vegetables and a special Maharashtrian masala called Goda Masala which gives this rice a unique flavor and aroma.
Masale Bhat is popularly made during festivals and is also a huge part of Marathi wedding Feasts.

INGREDIENTS 

FOR GODA MASALA FOR MASALE BHAT 

  • 1-2 star anise

  • 1inch cinnamon

  • ½ tsp dagad phool

  • 1tsp shah jeera

  • 3-4 green elaichi

  • 1-2 jaipatri ( mace)

  • 2tsp coriander seeds

  • ½ -1tsp poppy seeds

INSTRUCTIONS

  • Dry grind to powder form

  • Site in an airtight bottle 

NOTE: you can use 2-3 tsp of store-bought Goda masala for this recipe 

INGREDIENTS 

FOR MASALE BHAT 

  • 2 cups aromatic rice( I’ve used Jasmine rice) Basmati rice is traditionally not used for Masale Bhat 

  • ½ -1 tsp shah jeera

  • 3-4 Bay leaf

  • 10-12 Black pepper

  • 5-6 Clove( lavang)

  • 1tbsp ginger garlic green chili paste 

  • 2 medium Onion, sliced

  • ½ tsp Turmeric

  • 1-2 tsp Shilpa’s Masala Mill Everyday Masala

  • 1-2 tsp Kanda Lasun masala ( optional)

  • 2-3 tsp Shilpa’s Masala Mill Special Goda masala

  • ¼ -½ tsp sugar ( optional)

  • Few cashews

  • Fresh Coriander for garnish

  • Grated fresh coconut for garnish

  • 1-2 tbsp Ghee 

  • ¼ cup oil

  • 3-4 cups of hot water (depending upon your Rice) 

VEGETABLES

  • 1potato, cut

  • ½ cup Peas

  • 1Carrot, cut

  • Few Cauliflower florets

  • 5-6 Tondli cut 

INSTRUCTIONS

  • Heat oil in a large pot

  • Add shah jeera, bay leaves, black pepper, and cloves

  • Add ginger, garlic green chili paste. Fry for 30 sec

  • Add onions. Fry until onions turn golden brown 

  • Add turmeric, chili powder. Fry for 1-2 mins

  • Add Kanda lasun masala and Goda masala. 

  • Add salt and sugar

  • Add vegetables and cashews and fry for 2-3 mins

  • Add rice and fry gently for 2-3 mins

  • Add hot water ( enough to cook rice and vegetables) 

  • Cover and cook on low flame until rice and vegetables are cooked(10-14 mins)

  • Open the lid. Add ghee and garnish with fresh coriander and grated coconut 

  • Your easy and delicious Masale Bhat is ready.

  • Serve hot

NOTE

  • Tomatoes can be added 

  • To preserve the color of green peas, I cooked them separately and added them to rice after it was ready. Peas when cooked together with rice often lose their color.
