TANDOORI PANEER SANDWICH July 27, 2020 Shilpa Anand Tandoori Paneer sandwich and Rose Flavoured LassiPerfect evening snackSpicy Tandoori cottage cheese with chutney sandwiches paired beautifully with sweet Rose Lassi.INGREDIENTS: 1-2tbsp mustard oil1tbsp chili powder1 tsp coriander powder½ tbsp cumin powder1tsp Shilpa’s Masala Mill garam masala ½ tsp amchur powder( mango )¼ tsp black pepper powder1tbsp ginger garlic paste ½ cup of thick curd( hung curd)250 gms of paneer, cubes1-2tbsp of roasted Besan½ tsp lemon juiceSalt to tasteGreen chutney Slices of Cheese ( optional)4-6 slices of bread1tbsp ghee( or oil) Butter1med Capsicum, cubed1 medium onion, cubed1medium tomato, cubed( reduce seeds ) INSTRUCTIONSIn a bowl, add mustard oil and all the powdered spices. Mix wellNow add the hung curd, ginger garlic paste, roasted besan, and lemon juiceMix well until a smooth batter. Consistency should be thickish. ( if too thick add more yogurt, if too thin add more besan)Add all the vegetables and paneer Mix and marinate for an hour Now heat up some ghee in a pan Add the marinated tandoori paneer mixture Sauté for 8-10 minutes until masala cooks Switch off the gas. The tandoori paneer masala is ready Cool the mixture to make sandwichesButter the bread Add chutney Add the tandoori paneer masala. Add a slice of cheeseClose the sandwich Heat a skillet or tavaaLightly butter sandwich and place the buttered side down in the tavaa Toast until golden brown pressing the sandwich down few timesFlip and toast the other side. That’s it Your tasty tandoori paneer sandwich is ready! I’ve served it with rose-flavored Lassi (blend together yogurt, sugar and rose syrup.
