SPINACH AND CORN SANDWICH

INGREDIENTS

  • 1bunch (300-400 gms ) spinach washed and chopped( not too many stems) 

  • 1tbsp garlic, 

  • 200 gms sweet corn kernels, boiled 

  • 2tbsp all-purpose flour 

  • ½ tsp chilli flakes

  • 200 ml milk 

  • ½ tsp black pepper

  • Salt 

  • 4-6 bread slices

  • 40 gms Butter 

  • Cheese slices 

  • 1 tsp ketchup 

INSTRUCTIONS

  • heat butter in a pan and add garlic and stir fry well

  • Add chilli flakes and corn and cook for 1-2 mins

  • Add chopped spinach and sauté for 4-6 mins 

  • Add flour and mix it well until rawness disappears

  • Then add milk and simmer 

  • Add salt, pepper and cook for 3-4 mins until thickened 

  • Add 1tsp of ketchup or hot sauce 

  • You can add mozzarella cheese if desired

  • Now switch off the flame and allow the mix to cool down 

  • Take 2 bread slices 

  • Place sliced cheese on one slice and add the spinach mixture on top of it 

  • Cover with another bread slice and toast on a heated griddle with butter until both sides are golden and crispy ( or grill it) 

  • That’s it, your tasty vegetarian spinach and corn sandwich is ready 

  • Remove, cut and enjoy

Serve hot with ketchup and chutney
