  • 1cup yogurt ( I used thick homemade yogurt) 

  • 1tsp vanilla extract 

FOR SOAK

  • ⅓ cup of orange juice 

  • ⅓ cup of water

  • 1tbsp lemon juice 

  • ½ -1cup tutti frutti 

  • ¼ cup raisins 

  • ¼ cup figs, chopped

  • ¼ cup dates, chopped 

FOR FOLDING

  • ¼ cup almonds, chopped 

  • ¼ cup cashews, chopped

  • ¼ cup walnuts, chopped

INSTRUCTIONS 

  • Preheat oven to 160c 

  • Grease a springform 9 inch or 8 inches round cake pan 

  • In a saucepan add all the soaking ingredients and on low heat cook until the mixture thickens and fruits absorb the juice. Set aside to cool for further use

Mix and transfer batter to the prepared cake pan

Add the reserved topping and bake at 160 c for 50-60 mins or until a skewer inserted in centre comes out clean Cool before cutting That’s it, your Xmas plum cake is ready
