CHRISTMAS PLUM CAKE (no alcohol and no eggs) Vegetarian recipesdessertscakesChristmas dessertsalcohol freeeggless desserts 25 Dec Written By Shilpa Anand Ingredients for the cake 1. ½ cup maida ( all-purpose flour )¼ tsp cinnamon powder⅛ tsp ginger powder ⅛ tsp clove powder 1tsp orange zest 1tsp baking powder ½ tsp baking soda ½ cup of vegetable oil ¾ cup brown sugar ( can adjust to your desired sweetness) 1cup yogurt ( I used thick homemade yogurt) 1tsp vanilla extract FOR SOAK⅓ cup of orange juice ⅓ cup of water1tbsp lemon juice ½ -1cup tutti frutti ¼ cup raisins ¼ cup figs, chopped¼ cup dates, chopped FOR FOLDING¼ cup almonds, chopped ¼ cup cashews, chopped¼ cup walnuts, choppedINSTRUCTIONS Preheat oven to 160c Grease a springform 9 inch or 8 inches round cake pan In a saucepan add all the soaking ingredients and on low heat cook until the mixture thickens and fruits absorb the juice. Set aside to cool for further use In a bowl sieve and whisk the flour, baking soda, baking powder, spices and orange zest In another large bowl whisk together brown sugar and oil until well combined and creamy Now add yogurt and vanilla essence to the sugar mix and combine well Gently fold in the dry flour mix and nuts and combine well. Do not overmixAdd the soaked fruits mix reserving little to top off the Cake later Mix and transfer batter to the prepared cake pan Add the reserved topping and bake at 160 c for 50-60 mins or until a skewer inserted in centre comes out clean Cool before cutting That’s it, your Xmas plum cake is ready Enjoy!
